I love just about anything with basil pesto and these were no exception. They're also very versatile: you can use beef, chicken or turkey!


INGREDIENTS

1 lb uncooked ground chicken, turkey or beef
4 Tbs basil pesto
1/4C finely shredded Parmesan cheese (I omitted this ingredient--or use goat or sheep feta)
3 cloves garlic, minced
1/4 tsp salt
2-3" slices of ciabatta or four 3/4" slices rustic Italian bread
2 Tbs olive oil
4 slices fresh mozzarella (I used Tofutti Brand soy cheese)
2 C fresh basil leaves, arugula or spring garden mix (I used basil only)
8 small tomato slices
ground pepper

DIRECTIONS

In a large bowl combine chicken (or other meat), half the pesto, the Parmesan cheese (if using), garlic and salt. Shape into 4 1/2" thick oval patties (to fit bread).
Horizontally cut the ciabatta bread and brush both side with olive oil; set aside.
For grill, place patties on a greased rack directly over medium heat. Grill uncovered 10-13 mins, turning halfway through grilling. Top each patty with mozzarella or your favorite non-dairy cheese. Cover and grill 1-2 mins. Add bread to the rack; grill 1-2 mins. Arrange basil or greens on toasted bread. Top with patties, tomato slices and remaining pesto. Sprinkle with black pepper, if desired. Enjoy!
